Volume is how much changed hands over the day. It is shown in coins and in dollars because the two answer different questions: the coin figure says how much Bitcoin actually moved, and the dollar figure says how much money did. In a year when the price doubles, dollar volume can double while the same quantity of Bitcoin trades.
The split between buying and selling at market is the more useful half. An order that queues at a chosen price waits to be met; an order that takes a price already on offer happens immediately and is the one in a hurry. Counting which side was in a hurry, trade by trade as it printed, says more about pressure on Binance than the total does.
Where Binance runs a futures market as well, its turnover is shown beside the spot figure. They are not the same thing and are never added together: one is coins changing owner, the other is bets on where the price goes next, and on most venues the second is much the larger.
