Volume is how much changed hands over the day. The split between buying and selling at market is the more useful half. An order that queues at a chosen price waits to be met; an order that takes a price already on offer happens immediately and is the one in a hurry. Counting which side was in a hurry, trade by trade as it printed, says more about pressure on Bitstamp than the total does.
Where Bitstamp runs a futures market as well, its turnover is shown beside the spot figure. They are not the same thing and are never added together: one is coins changing owner, the other is bets on where the price goes next, and on most venues the second is much the larger.
