Open interest is the total value of futures positions that are still open. It grows when new bets are opened and falls when they are closed or forced shut. It is not trading volume: volume counts what changed hands during the day, while open interest counts what is still standing at the end of it. A day of heavy trading that closes as many bets as it opens moves volume a long way and open interest hardly at all.

The figure splits by what the contract settles in. Cash-settled contracts pay out in dollars, so a trader can take a position on the price without ever holding Bitcoin. Coin-settled contracts pay out in Bitcoin, which means the collateral behind them moves with the price as well, and a falling price shrinks the backing and the position together. The split is worth watching because the two behave differently in a sharp move.
